RECIPE ALERT: Apple Pie

Apple Pie
Crust Ingredients:
2 ½ cups almond flour
½ tsp salt
½ tsp baking soda
½ cup palm shortening or coconut oil
2 tbsp maple syrup
2 tbsp vanilla extract
Streusel Ingredients:
1/3 cup shredded unsweetened coconut
1 tbsp honey
¼ tsp sea salt
1 tsp ground cinnamon
¼ tsp ground nutmeg
1/3 cup chopped nuts
2 tbsp melted coconut oil
Filing Ingredients:
6 tart apples (6-7 cups when sliced)
2 tbsp lemon juice
½ cup honey
3 ½ tbsp tapioca flour
2 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground cloves
1/8 tsp sea salt
Zest of ½ orange
2 tbsp melted coconut oil
Crust Directions:
- Preheat oven to 325 degrees Fahrenheit
- In a medium bowl, combine dry Crust Ingredients
- In a small bowl, combine wet Crust Ingredients (make sure to melt palm shortening before mixing into the batter)
- Stir wet ingredients into dry
- Pat the dough into a 9-inch glass pie dish
- Bake for 10-15 minutes or until golden
Pie Directions:
- Core and slice apples into very thin slices, about 1/8 inch. Peeling is optional.
- Combine all Filling Ingredients in a saucepan
- Cook apples on low to medium heat until they are just getting soft
- Pour into the baked pie crust and press lightly so they are level
- Preheat oven to 300 degrees Fahrenheit
- In a small bowl, combine all Streusel Ingredients
- Spread streusel topping over apple mixture, covering all apples evenly. Try to cover the edges completely to decrease boiling over
- Place pie pan on baking sheet to catch leaks
- Bake 55-75 minutes
- Let cool 1-3 hours before slicing
